Journey With Cookbooks #4

Well the warmth left Montana, so I wanted something warm to eat!! Soup. Soup is always nice on a cold day.

Again I had to choose a recipe from my cookbooks but this one was not marked. Chicken Tortilla Soup.

Still going through the Frontier Cookbook

Reading through the recipe this one will only take 50min cooking time and only 20min prep. So not too bad!!( in the prep time i always add extra time incase Elizabeth wants to help)

Elizabeth helped mix the spices. My big helper!!
Chicken olive oiled and seasoned. I like it that the chicken will be baked…less time I have to watch. More time to make sure baby is not being naughty.
All the diced ingredients! I like to dice…Mwahahahaha 😂
Cooking the veggies. This recipes is super easy. It’s a lot of adding and waiting. I like this recipe 😎
The hubby had to taste it…it was approved.

I feel like every time I’m cooking something new, the hubby has to taste it. Which I guess is good; because I don’t like to taste test as I cook…It’s just a mystery when it’s done…🙃

Once again. Add rest of ingredients, chicken, broth, water, extra seasonings, and salt. Then let it simmer 20min. More waiting.

I think waiting is my favorite kind of cooking. I will be doing this recipe again….waiting…🤓

Last step was to add the corn tortilla strips.
Finished soup. Topped with sour cream, red onions, and cheese. Yummy!

As I said simple recipe!! This blog seems more relaxed than previous cooking posts because it actually is. It was so easy and chill.

And the family said yum! Elizabeth actually liked the soup this time!! To me that is an accomplishment in itself.

Look like picture: 8…it actually looks similar.

Taste: 10! Hubby went for seconds!! Elizabeth ate her whole bowl; the table had some too….

Easiness: 10! Sweetest and easiest recipe! 😎

I will definitely make this recipe again!! Especially when I am in the mood to be lazy. However next time I might fidget with the recipe and make less of it. It makes 8 servings. The hubby will get bored with eating soup before it is gone…so I guess I’ll be eating soup for the next few days.

Life As A Mama #27

Park day…a new park for us…this park seemed more like a park for 5yr olds and up…

She scares me sometimes…she reminds me of my older sister…
….
Wobbly stepping bridge. I almost slipped…but she was holding my hand jumping across…
A slick ladder with only two small holes as hand rails…I tried to help her and she yelled at me “Nooo!”
Mama is not allowed on the slide…
No matter the height or safety of a slide…she will always go down giggling…
Oh no…a pup pup…
I did ask the pet owner first. She said of course. Elizabeth is not afraid of dogs…maybe small yap yap dogs, but the bigger the dog the better.
She does not like the baby styled swings…she is a big girl swing type…
Daddy was off at the doctors…mama is exhausted…
Around…and around…and around…
Once home after long day at park, shopping, and giggling baby they sleep.

I don’t know if this was truly about her fearlessness or just her at the park. But she doesn’t fear anything. Remember she is only 2 years old…I miss that feeling of not being afraid; fears come with age I guess. Being a child is an amazing thing.

Journey w/ Cookbooks #1

My hubby has a friend, from work, who is currently retiring and moving; that decided to gift us his cookbooks. I was thinking like 5-6 new cookbooks…more like 3 dozen cookbooks. It was a God send; I was getting bored of cooking my normal go-to recipes.

There were 3 cookbooks specializing on Italian food…like the unusual, adventurous food…we are giving those to a different buddy. We are brave, but not that brave…let’s be honest, I don’t think I could cook the weird things without getting sick…

So my plan is to go through 3 books at a time. The one pictured below, another by the same author but called, ‘Dinner Time’, and then lastly one called ‘Crusts’. I’ve done a few already. They are delicious!! Sadly I didn’t think of writing my experience until now.

This is being used for today’s cooking session. Thank you Ree Drummond!!

This is recipe # 7 so far. Rigatoni & Meatballs. Serves 6-8…we will be eating the is a while. A new recipe of meatballs from scratch…I have one, but this is more complex.

I’ll take more pictures next time…but I’m cooking the meatballs and sauce. The noodles are later.

You know how reading the recipe all the way through is a smart thing…I always forget to do that. I have 20min after I finish the meatballs…haha 🤪

Elizabeth loves to help mama…or at least hang out with mama when she is cooking.
She is pointing at the picture and saying, “Yumm!” Hopefully she likes mine just as much…

I think I will rate them one by one after each recipe. Taste for my family. Easiness to follow. And if it looks like the picture…haha 😅

Meatballs and sauce is done! Noodles only 2min left!

Finally finished! Her picture looks so much better than mine… rating out of 10…so guess looking like the picture is more like a 4. Taste: My hubby gives it a 10! Elizabeth gives it a “Mmmmmm” so probably a solid 8. I like it too, but I mostly care about their opinion. Easiness…it is not too bad. If I had read through the entire recipe I would have time managed better. I give easiness a 7.

So overall. I will definitely be trying this recipe again!! Tomorrow night we are using the leftovers for a suggestion from the cookbook…Meatball Sliders.

I will make the mini rolls from scratch…we shall see!!

Life As A Mama #26

Our breakfasts are usually normal…
She ate most of Daddy’s food yesterday so I gave her that today!! Oatmeal, strawberry yogurt, and milk.
I always make Elizabeth’s food first so that mine is nice and warm when I go to eat it. Toasted peanut butter honey toast!! Yum!
The hubby is happily eating while watching his morning news…Elizabeth is copying daddy and eating like a big girl.
You must always get your milk last so it is ice cold when you drink it!! 😎
Back to the table…?
Please…Not today…😩
Munch…munch…munch!!
At least she is eating! I guess I’ll let it slide…
Round #2!! Drink milk, and get a second half cup to enjoy ice cold milk….

New warm one hers…half eaten one mine…

I have to look at it from this view point…she ate half of the 1st and all of the second…😮 Her tummy is full!

Yesterday Daddy’s food was hers, today it was my turn. I guess this is what I get for laughing at the hubby having to share his food…haha

Maybe tomorrow we all will get to eat our own food…maybe…or she will decided both Mama’s and Daddy’s food is delicious and needing to be shared…

I was invited to a women’s church event on Saturday. It was going to be from 8am-4pm…so really 7am-5pm. So 10hrs away from home…Daddy in charge of watching baby 🤪…

The longest I’ve been away from Elizabeth was a hair cut 4mo ago and I was gone for 1hr…
Off to my adventure…
Destroyer of the house…
Frazzled Daddy…

Being a sweet sweet playing outside…

Watching a movie and snuggling Daddy…

And then coming home to a napping baby and tired Daddy…

The hubby did a good job. she was a stinker here and there but he said it was just small whinny cries. He only had one poopy diaper to change but he survived.

He got to experience somewhat of my day…because I did come home to dishes…a messy house…and still having to make dinner. Which I’m okay with this…

Want to know why…!?! Because if he had done everything, I would have come home to a frazzled worn out hubby, so much so that he would never let me leave the baby with him again. So I’m good, I’m good. 😎

Rest day…

No writing today. It’s our once a month shopping day!!! So it’s a full day of getting necessities from various stores. It’s way cheaper than buying it at our local supermarket. So we drive 45miles to our big city…

So sadly, all this means is I won’t be posting the next chapter of my story until tomorrow. I’ll edit it tonight and have it scheduled to post tomorrow morning!

Life As A Mama #20

She normally sleeps on her bed all night long, but some nights, like last night, she “snuggles” with mama and daddy…

Just in case people might worry. We have a heater on, and she likes no covers…I do cover her up when I wake up occasionally; however, every time it’s morning she has no covers…haha 😅

Sleeping peacefully…
There are pillows between the beds because of this reason…
As long as she is not dreaming she doesn’t kick…if I move her she wakes up. I’ve gotten used to it…
Midnight snack… baby toes anyone?
I guess mama is more comfortable than the bed…
Usually she ends up sleeping here between the beds…I usually wake up and cover her. It never stays though…🙄

She cracks me up sometimes…🤣 Although , I do love the nights where she actually wants to snuggle. I wake up to a sweet baby thing snuggling her mama. So sweet ❤️

This happened last night…

I had told the hubby for Valentine’s Day I would make him some apple strudel!! And homemade. 😎
The triple D’s. Haha but there were lots of dishes from dinner…I now believe that the sink area is my domain…
Ready!! And you can’t have strudel without vanilla ice cream…unless you are me and you have no lactose free ice cream made…
Happy Hubby and happy baby!
Sneaky baby hand…understand that as her hand came over the Hubby started to silent laugh…which caused me to laugh…
Hubby continued to laughed. I continued to laugh. Which caused Elizabeth to find it funny and shove a huge bite of mama’s strudel in her mouth…

I was only sad for a split second. Because honestly I had eaten about 10 Oreos yesterday, so she was saving me from gaining more weight.

Also strudel is better with vanilla ice cream, and how could I stop my hungry thing from eating. I’m sure all moms have experienced the days where your child doesn’t really eat a lot during the day…and you worry about them…

I was having one of those days yesterday. So for her to want to steal mine and eat it all, made me super happy. Her belly was full!
